3 tablespoons olive oil

4 4-ounce pieces of fresh Salmon

1 Tablespoon lemon-pepper seasoning

Sea salt

Black Pepper

1 tablespoon chopped garlic

1 tablespoon chopped shallot (yellow onion)

1 tablespoon unsalted butter

3 lemons, halved

¼ cup water

  1. Preheat oven to 345-350 F. Season Salmon with the lemon-pepper seasoning and salt and pepper. In a sauté pan heat 2 tablespoons of the olive over medium heat.  Saute’ Salmon in pan for 5 minutes or until golden brown. Turn Salmon over and cook for 1 minute more.  Add garlic, shallot or yellow onion, and butter to pan.
  2. Place the Salmon and pan drippings in a baking dish. Squeeze the lemons over Salmon, add water, the remaining tablespoon of olive oil, and a pinch of pepper. Bake for 7 minutes. Serve with steamed broccoli or choice of green vegetable.
