1/3 cut onion
1/3 purple onion
1/3 cup chopped portabello mushrooms
2 slices of eggplant
1/3 cup chopped red peppers
1 chopped garlic clove
1 cup raw organic spinach
2 slices of tomato
4 tablespoons jalapeno and cilantro hummus (or your favorite choice)
3 tablespoons Avocado
2 slices bread (recommended Ezekiel, or gluten-free)
1/3 cup olive oil
1 tablespoon goat cheese (of your choice)
In a medium skillet, stir-fry all all vegetables of your choice, except spinach and tomatoes in 3 tablespoons of olive oil (of the 1/3 cup) until lightly brown. Mix in Hummus as a sauce. Toast bread on both sides with 2 teaspoons of olive oil. Spread Avocado and goat cheese onto both sides of the bread. Place spinach and vegetable mixture between bread and serve.
